TODAY'S FRUGAL FAMILY MEAL: BAKED CHEESY BURRITO

Alrighty, here is a family favorite of ours that is super easy to make. It is our Baked Cheesy Burritos.

You will need...

1 package of 8 - 10 frozen burritos (we use the bean and beef burritos)
1 cup of mozzarella or Mexican mix shredded cheese (or more to taste)
1 1/2 cups of salsa (we use mild..use whichever floats your boat)

DIRECTIONS

Pre-heat oven to 350

Place Frozen Burritos into a 8 X 11 glass casserole dish (I have to tip them up on their sides and put two on the corner flat. You'll see what I mean when you do it. LOL)

Cover the Frozen Burritos with the Salsa. (We actually use more than I have listed but 1 1/2 cups works fine for frugality sake)

Cover the Salsa and Burritos with the cheese

Place dish into the oven for 20 - 30 minutes or until cheese is melted and burritos are cooked through to middle.

Voila! Yuummmooohhh!

Well fine. Now I'm hungry. Thank. You. Very. Much. They do look yummy. I think I'll add some slices olives and scallions (after they are cooked of course). There there is the guacamole and sour cream too. Yikes what have I done? Added about a million calories that's what. Bwahahahaha. :)

Quick tip for your recipe: If you'll fry up a 1/2 pound of hamburger and open up a can of refried beans you can have this same meal just as cheaply, probably cheaper, almost just as quickly (ten minutes more maybe) and you'll truly know what you're getting inside the burrito. Just a tip.

Of course, I'm not a big fan of frozen burritos, as you can tell, lol.
